A sulfur content that is too high would influence the smell and taste of the water. Sulfur can be removed from the water by natural aeration prior to bottling.
Sulfate waters – i.e. mineral waters containing sulfur – stem from rock containing gypsum such as can be found in northern Hessen or on the edge of the Harz (mountainous area in Germany). The sulfur content is specified as sulfate content on the label.
